Keto-Friendly Double Layered Coconut Mug Cake

Got my hands on some β€œcoconut cupcake” protein powder fromΒ Protein MilkshakeΒ and as soon as I opened, I knew I had to incorporate in this coconut mug cake! Each protein powder serving is only 110 cals, 22g protein, 3g carbs. It can easily be added to smoothies, coffee, pancakes, waffles, desserts...the possibilities are endless!

For the cake, whisk the following:

1 serving Protein MilkshakeΒ 
1 Egg
2 tbsp Coconut Flour
1 tbsp Unsweetened Almond Milk
1 tbsp heavy cream
1/4 tsp Baking Powder
1 tbsp monk fruit

Then divide into 2 ramekins.
Heat each ramekin in microwave 60 seconds.

While those cool, make frosting with:
Butter
Confectioners sweetener
Unsweetened almond milk
Dash vanilla
Unsweetened coconut flakes

Layer one mug cake with frosting, followed by 2nd mug cake with frosting and add frosting all over the sides.
