Chewy Protein Snickerdoodle Cookies

The classic Snickerdoodle cookie just got a sugar free makeover! Keto, gluten free, and easy to bake - these babies just may be better than the traditional!

Recipe

1 cup Cinnamon Bun, Vanilla, Cream Puff, or Cupcake Batter Protein Milkshake

2 tbsp butter at room temperature 

1 tbsp almond flour

1 tbsp coconut flour

1/2 tbsp baking powder

1 egg

1 tbsp milk of your choice (I used unsweetened almond milk)

1 tsp cinnamon powder

1 tsp stevia extract powder

Preheat your oven to 350 degrees. Using a mixer combine all of your wet ingredients (egg, milk, and butter). Once these are combined, add whey, almond flour, coconut flour, and baking powder.

Mix until well combined. You will be left with a very sticky, wet dough.

Line a cookie sheet with parchment paper. Drop your dough onto your cookie sheet. You will have between 6-8 cookies. Combine stevia extract and cinnamon; sprinkle a bit of the mixture on top of each cookie. Bake cookies for 8-10 minutes. Enjoy!
