S'mores Protein Cupcakes

Macros per cupcake: 12g p • 7g c • 172 cal • 3g f • 2g fiber

Ingredients:

  • 1 scoop Protein Milkshake S'mores, Chocolate, Chocolate Mousse or Rocky Road.
  • 1/4 cup coconut flour
  • 1/4 cup almond flour
  • 2 tbsp butter or coconut oil
  • 1 egg or vegan egg substitute
  • 1 tbsp sweetener of choice
  • 1 1/2 tbsp vanilla extract
  • 8 oz cream cheese
  • 1 tbsp cocoa powder
  • 1-2 tbsp sugar free semi-sweet chocolate chips or carob chips
  • Marshmallows (gluten free sugar free)


Recipe:

  1. Melt your Butter then mix together with your Almond & Coconut Flour
  2. Add the mix into the bottom of some silicone cups (or muffin pan coated with non-stick cooking spray) and pack them in firmly to create your crust
  3. Bake them on 350F/176C for 10 minutes fort a “crunchy” crust or continue to Step 4 for a softer crust 
  4. Add protein powder, butter, cream cheese, vanilla extract, egg & sweetener into a bowl and mix until smooth
  5. Evenly distribute mix into tray & fill them 3/4 of the way full
  6. Sprinkle cocoa powder to each one
  7. Add your Chocolate Chips on top
  8. Bake them on 350F/176C for 10-12 minutes
  9. Remove them from the oven and top each cupcake with 1 Marshmallow (rip it in half)
  10. Continue baking them on 350F/176C for around 5 minutes or until marshmallows have become brown and toasty!
  11. Remove, let cool & savor each bite!🍫😋
