Keto Confetti Cupcake Batter Pancakes

These colorful keto Confetti Cupcake Batter Pancakes were created by @ KETONEMEPLEASE.

Out of all the protein powders I’ve tried, this one by far is my FAVORITE.
I reviewed it previously and made birthday cake fat bombs. I wanted to re-create this recipe in a way that I knew best and that’s with pancakes 

I found a recipe on Pinterest for the FLUFFIEST Keto pancakes ever and when I have all the ingredients, this is the only way I’ll make them!

Keto Confetti Cupcake Batter Pancakes 

P A N C A K E B A T T E R :

*1 serving Protein Milkshake 
* 2 tablespoons superfine coconut flour
* ½ cup superfine almond flour
* 1 powdered erythritol
* ½ teaspoon baking powder
* 3 medium eggs, room temperature
* ½ teaspoon vanilla extract
* ¼ teaspoon ground cinnamon
* 2 tablespoons cream cheese

S P R I N K L E S :
* 3 Egg Whites
* 12oz Powdered Monk Fruit
* 1 tsp Vanilla
* 2 tsp Lemon Juice
* Food Coloring
* 1tsp Oil (Optional)

You have to pipe the sprinkles mixture and let it dry on parchment paper. Once it’s dried you have to break it up in the desired size. 

If you don’t feel like making your own sprinkles, @thesprinklecompany company & @wholesome.provisions have some great keto sprinkles.

The pancakes were pan fried in a little bit of avocado oil for crispiness. 

Since the pancakes were so sweet from the sprinkles they didn’t need syrup so I just topped it with some sugar free whipped cream and more sprinkles of course!
